Healthy Chicken Salad Lettuce Wraps

I made these yummy, easy chicken salad lettuce wraps last week when my friend Myra and her family came for a visit, and then turned around and made a second batch for  a Bible study carry in. It was just too good not to share!

I love a chunky and crunchy chicken salad, don’t you? This one is bursting with flavor with cashews, craisins, grapes, and celery – YUMS!

I love serving this on romaine lettuce boats – it’s healthier and it makes for a beautiful dish! This recipe is great for showers, teas, or luncheons!

Here’s the scoop on how to make these delicious and healthy Chicken Salad Lettuce Wraps:

Chicken Salad Lettuce Wraps     (serves 6-8)

Ingredients:

  • 4-6 Chicken Breast cooked and shredded
  • 1 cup of mayonnaise {I use the olive oil kind}
  • 1 cup of cashews
  • 1/2 cup of craisins
  • 1 cup of grapes halved
  • 2-3 stalks of celery chopped
  • salt and pepper to taste
  • romaine lettuce

Directions:

1. Combine shredded chicken, grapes, craisins, celery and grapes.

2. Add mayonnaise the the dry mixture and combine until mixture is creamy.

3. Mix in cashews.

4. Spread chicken salad onto romaine lettuce to make wraps or serve on bread.

    Yum — I think I’ll give this a try! I like anything that goes in the slow cooker, so something like hot crab dip, artichoke dip, etc. would be my favorite appetizer/luncheony food to serve!

    Do your boys actually eat this? My kids wouldn’t…

      I didn’t give them any because I hoarded it for myself and the “grownups”. Some of them would have probably ate it, since it had so many goodies in it, but I’m sure at least Henry would have fought it! =)
