Essential Pumpkin Bread
Pumpkin is my favorite taste of fall. Pumpkin pancakes, pumpkin butter, my mom’s pumpkin pie (or Costco’s if I’m in a rush – it’s amazing and HUGE), pumpkin rolls, even those gummy pumpkins! =)
Pumpkin Bread is one of my absolute favorites, and I like making a big batch so we can enjoy it most of the week and have some to share.
This is my go-to recipe for Pumpkin Bread. It has turned out great every time I’m made it. This time I changed it up a little bit to use some of my essential oils that I had on hand instead of a couple of my spices. The result was even better – as it seemed to blend better through the batch and had more of that pure seasonal yummy flavor!
As my fellow-oiler pharmasist friend says, “If you can cook/bake with oils, why wouldn’t you?” You get a pure undiluted form of the plant and the power of antioxidants and other potential benefits!
Search cinnamon essential oil on PubMed.gov and you will be AMAZED at the studies and research you’ll find. {200+ articles from the US National Library of MedicineNational Institutes of Health} I told you essential oils are the real deal!
So anyway, you can make this recipe with or without essential oils, but I’ll be using mine in this recipe from here out!
{This recipe makes 3 loaves, so feel free to reduce it for a smaller batch.}
[print_this]ESSENTIAL PUMPKIN BREAD
Ingredients:
- 3 cups of Pure Pumpkin
- 1 1/2 c vegetable oil
- 4 cups of sugar
- 6 eggs
- 4 3/4 cups of flour
- 1 1/2 t baking powder
- 1 1/2 t salt
- 1 1/2 t baking soda
- 1 drop of Young Living Cinnamon Bark essential oil (or substitute 1 1/2 teaspoons of ground cinnamon)
- 1 drop of Young Living Nutmeg essential oil (or substitute 1 1/2 teaspoons of ground nutmeg)
- 1 drop of Young Living Clove Oil (or substitute 1 1/2 teaspoons of ground cloves)
Directions:
1. Preheat the oven to 350 degrees. Flour and grease 3 medium bread loaf pans.
2. Mix together pumpkin, oil, sugar, and eggs in a very large bowl. Add the flour, baking powder, salt, baking soda, salt, and spices. Stir until well blended.
3. Divide batter between pans evenly.
4. Bake for 45 – 60 minutes.

I made this Pumpkin bread for a 101 class I was co-teaching today! It was amazing and everybody loved it!!! Amazing!
