First you need 2 pints of fresh blackberries, which are in season and on sale right now.  Sprinkle them with sugar – you don’t need much so you still get that tart flavor, less than a 1/4 of a cup. Next you need the basic baking ingredients: salt, an egg, baking powder, flour, sugar, vanilla, and butter. You know, the good stuff. 

Cream the butter and sugar together. Then add the dry ingredients slowly. And then, you know the drill add your wet ingredients – the egg and vanilla.

Once those are nice and mixed, you should have a cookie dough-like batter.  {I dare you not to lick the bowl – it’s incredibly tasty.}

Drop the batter on the blackberries like so…

Put it in a warmed oven and you’re just 35 minutes away from golden-brown, warm, gooey, blackberry deliciousness .

Easy Homemade Blackberry Cobbler

Serves 6                                                                                                                                                              Adapted from this Peach Cobbler Recipe

Ingredients:

  • 2 pints of fresh blackberries
  • < 1/4 c of sugar
  • 1/2 c of butter
  • 1 c of sugar
  • 1 c of all purpose flour
  • 1 1/4 t baking powder
  • 1/8 salt
  • 1 egg
  • 1 t vanilla

Directions:

1. Line a greased pie plate or 2 qt dish with blackberries.  Sprinkle with <1/4 cup of sugar.

2. Set aside, and cream the sugar and butter.

3. Mix the dry ingredients (flour, baking powder, and salt) in separate bowl. Add to the butter/sugar mixture slowly until well blended.

4. Stir in egg and vanilla.

5. Drop by the spoonfuls on top of  the fresh blackberries.

6. Bake in a preheated oven at 350 degrees for 35-45 minutes, until golden brown on top and bubbly below.

7. Serve with a scoop of ice cream and friendship.

    I’ll have to try this — it’s different than my grandmother’s usual bb cobbler recipe. Blackberries are EVERYWHERE in Western Oregon, even in the middle of big cities. And come August (when they ripen here), people use them in everything — it’s awesome!

    I don’t quite get how much sugar…1/4 cup vs. 1 cup?

      It depends on how tart you like your berries. I wouldn’t do more than 1/2 cup.
